Great gluten-free recipes that the whole family will enjoy.
When a family member has gluten intolerance, the cooking responsibilities are seriously challenged. Donna Washburn and Heather Butt have created tantalizing recipes that not only deal with that allergy but will please the rest of the family, too.
This comprehensive kitchen companion includes tasty and innovative ideas for baked goods, pasta dishes, appetizers, family meals and mouthwatering desserts. Since many who must manage a gluten intolerance also have other allergies, the authors provide recipes for dairy-free, egg-free and white sugar-free dishes as well.

The authors also include extensive information on grains, including amaranth, corn, Montina (a flour created from Indian rice grass), quinoa and teff (a grain from northeastern Africa). A special section on gluten-free grains deals with their appearance, flavor and texture, plus it also provides suggestions on how to use and store them.
I already own two of their previous gluten free cookbooks which I've found to be excellent, especially their desserts. This cookbook does an excellent job of describing not only what ingredients are safe for the gluten intolerant but what each GF flour brings to the table (pun inadvertent!) nutritionally.
Features such as a table which shows how long and where to store ingredients (shelf, frig, freezer) is a handy resource. There are also many recipes that are egg free, dairy free and white sugar free.
Another table lists nutrition data for many GF flours including protein, fat, carbs, fiber, calcium and iron. Pretty nifty.
So far, I have tried only a couple of recipes. One was the Ancient Grains bread in the bread machine. I found it came out a little undone, however, they do give directions on how to test and leave in longer if this is the case.

At first, I was over whelmed by all the information in the book. Then I thought to myself, well I will just try something simple. I chose the Pesto Pork and made it tonight. It was fantastic! I could not believe how easy it was to prepare or how GREAT it tasted. It was healthy, not to heavy for me but not to light for my son. Next I hope to try the Chicken Quesadillas or Shrimp with white wine (Don't remember the real name if it). Your book has changed my whole idea on cooking GF. I had become bored with cooking since I had to keep everything so basic but now I have so many ways to add flavor and keep cholesterol under control it is not even funny. Thank you very much for all your hard work my whole family appreciated it very much.
I love these authors. Their directions are easy to follow and they have created really GOOD recipes that result in baked goods, etc. with the taste and texture of "real" foods. I own two of their books...one with various types of recipes and one with baking recipes. I was really excited to find other books by them (I also bought the book on bread machine breads when I bought this one). Well, as usual, their recipes are great, however, there is a LOT of repetition between the cookbooks...the same recipes in four out of four of the books (especially the breads). I found this to be somewhat disappointing and felt I'd wasted money in buying more books by these authors (after all, how many recipes do most of us use? Generally, we cooks find a few that work well and use them regularly...right?) I would still recommend cookbooks by these authors since they really do have the best recipes for gluten free cooking, but, you might want to buy the one with 250 varied recipes and forget the... read more
