How old is Ethiopian cuisine and the unique way of eating it? Ethiopians proudly say their cuisine goes back 3,000 to 5,000 years. Archaeologists and historians now believe it emerged in the first millennium A.D. in Aksum, an ancient kingdom that occupied what's now the northern region of Ethiopia and the southern region of neighboring Eritrea.
But regardless of when Ethiopians began to eat spicy wots atop the spongy flatbread injera, or when they first drank the intoxicating honey wine called t'ej, their cuisine remains unique in the world.
Mesob Across America: Ethiopian Food in the U.S.A. brings together what respected scholars and passionate Ethiopians know and believe about this delectable cuisine. From the ingredients of the Ethiopian kitchen - the foods, the spices, and the ways of combining them - to a close-up look at the cuisine's history and culture, Mesob Across America is both comprehensive and anecdotal.
Explore the history of how restaurant communities emerged in the U.S., and visit them as they exist today. Learn how to prepare a five-course Ethiopian meal, including homemade t'ej. And solve the mystery of when Ethiopian food made its debut in America - which was not when most Ethiopians think it did.
This author did his assignment very well. This book is not only about the Ethiopian food but also about the people, their history and how they live in the US. Those are extremely important contexts when we talk about food. Certainly food and identity are inextricably related. I rarely buy a book but I decided to own this one. I recommend Mesob Across America to anyone interested in researching and understanding ethnic cuisine in America and beyond. For those who like Ethiopian food the book is worth the price. Excellent job!
I enjoy Ethiopian food and so thought I might enjoy reading this book. I was surprised how entertaining it was in addition to giving lots of interesting information about the history and preparation of this type of food. The author is a good writer and clearly did his homework.
The book is loaded with interesting information and gives some important notes on authentic Ethiopian cuisine. However there are only a few recipes. They are mostly for those stables of an Ethiopian meal: honey wine, spiced butter for cooking and a traditional cheese dish. The other three or four recipes are meat based. I was specifically looking for vegetarian dishes, so this was my best purchase. Just read the description of the book closely. The book is fine, just not what I was looking for.
