\nobserved in the variation of the sensory and nutritional characteristics.
\nThe main factors influencing the entity of these transformations are represented by the
\ntemperature and the time of the treatment, the nature of foods being fried, the presence
\nof metals that catalyze the oxidation phenomena, and the composition of the frying oil.
\nIn order to prevent possible consumer risks due to the excessive and inappropriate use
\nof frying oils and fats, the Italian Ministry of Health, in Circular n.1 of January 11,
\n1991, established that the concentration of total polar compounds (TPC), indicators of
\nthe state of triglyceride alteration, does not exceed 25 g /100 g in oils and fats used for
\nfrying food, a limit that reflects similar provisions established by legislation in other
\ncountries. In current analytical practice, the TPC evaluation method by preparative
\ncolumn chromatography is quite laborious and it is not repeatable and accurate. The
\naims of this study were to develop an accurate and repeatable method to evaluate the
\nvolatile organic compounds (VOC) which are formed during frying and find new
\npossible markers correlated with TPC data, which should be suitable for routine use in
\norder to determine the degree of triglycerides alteration. In particular, the markers have
\nbeen studied by dynamic head space analysis (DHS) combined with high resolution gas-
\nchromatography (HRGC) equipped with mass spectrometry (MS) and 1H-NMR

Open burning is also very common, which emits plenty of volatile\norganic compounds and pose serious threat to the associated environment. Hence, characterization of air born\npollutants from such dumping environment is necessary at this juncture to develop stringent regulatory rules in\ndeveloping countries. Therefore, the study objective considered to characterize the ambient air samples from\ntwo municipal solid waste dumpsites viz., Kodungaiyur and Perungudi in Chennai during two different seasons.\nThe characterization study showed that dust, black carbon, ammonia, sulphate and nitrate were the major\nspecies of PM10 and PM2.5. Major metal ions like Al, B, Ba, Cd, Cu, Fe, Ca, K, Mg, Ni, Pb, Sr and Zn were also\nidentified in the particulates. Concentrations of particulates were observed to be high during the summer as\ncompared to that of monsoon period in both the dumpsites. The respirable particulate matter in air samples\nvaried widely between 211 μg/m3 and 900 μg/m3, and exceeding the upper limits of 150 μg/m3 standards\nprescribed by Central Pollution Control Board (CPCB), as well as United States Environmental Protection Agency\n(US-EPA). The concentrations NOx is much higher than SOx in Kodungaiyur samples.
