The sausage grinder attachment works well for *small* batches, as long as your meat is carefully trimmed. Does make the
mixer run very hot, which may be unnerving to some folks.

Yes, the meat needs to remain chilled during the grinding process. It's difficult to manage that with smaller machines, as their
motors have to work harder to grind the meat and push it out into the casings, which can generates a lot of heat.

You definitely have to watch the machine during the process to make sure that your seasonings are getting effectively mixed in
with the meat. I found that nearly all of the fennel seeds and peppers in one batch of italian sausage ended up in just a couple
of links. That was a little embarrassing when I served them at a cookout.

Valentines, either) from her in 25 years. She hasn't from me either. We kinda buy through our children for each other, if there is
something one of us knows the other wants, but it has worked out great and saves a ton of money and hassle. Although,
sometimes we might buy ourselves something together if there is a need, like a TV, curtains, etc. The last thing that I can think
of buying her "through the kids" is a Mother's ring about 7 years ago. My daughters are older and I have a 7 year (late addition)
son. When he was born, we wanted to get her one.
Before anyone thinks that I am cheap, I want to say that I buy her presents all the time. I send her roses out of the blue. She is
very low maintence and very practical, but she likes the "unexpected" gifts. As do I. I am really going to smoke over the mixer
you guys are discussing. It sounds like the bomb. That might be her next surprise present.

I am so glad that this discussion is back. I've been in a fog since the sausage thread disappeared. Unfortunately, the people
on this board http://forum.sausagemaking.org/index.php are a bit stiff and it makes for difficult discussion.
If you need to know ANYTHING about sausagemaking, though, that is the place to go. They don't go for +1's, "This"'s or just
requoting. You have to bring your game.

I think it was darrenG. IIRC, the thread was about putting dried milk powder in salami. Apparently, Marianski and Bertolli don't,
but Rulhman and Len Poli do. Some idiot called Rulhman a hack and thethread went downhill from there.

Weisswurt is not one that I do, because it's not smoked and thus doesn't have a long enough shelf life for my rate of
consumption. I HATE freezing/thawing, just doesn't taste the same. Traditionally I think people use something closer to a #20
casing for that style.
